What to do with all those cucumbers from the garden?? Here’s one idea… quick and easy pickles! You won’t believe how simple these are.
We had just finished the last of a jar of Wickles Dirty Dill Chips which I really enjoyed. Instead of doing like I usually do and dumping out the juice and throwing the jar in the trash, I decided to make us some more.
Wash a cucumber or two. A small to medium size one is preferable. They are crisper and just have better flavor.
Slice cucumber in rounds. Cut them about 1/2 inch thick.
Put slices in the recently emptied pickle jar with existing pickle juice. Put lid on jar.

Shake jar and sit in dark place. Shake once a day for 1 week. If the lid fits tight, let the jar sit upside down once or twice to make sure all the slices are soaked in the juice.
